WHere is an easy take on a beverage found on the seasonal menu. This is a large-volume prepared mix that's packed with essence of the Christmas time, which makes it excellent for hosting a celebration. Any leftover syrup you can use for morning drinks, desserts, or for more rounds of this cocktail.

Makes enough for 10 servings
Ingredients for the Clementine Syrup (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
For the Cocktail (yields 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Directions
Making the Cordial: Combine all the components inside a saucepan, heat until it reaches a simmer, stirring until the sugar dissolves. After that, remove from the burner and leave to reach room temperature entirely. Pour into a clean bottle, close it and refrigerate it chilled, where it will keep for up to one month.
For the Batch Mix: Mix the specified spirits and syrup into one sizeable container, leave to sit for one hour, then filter it best through cheesecloth, making it perfectly clear.
To serve: Measure 85ml from the premix into your stirring glass filled with ice, and stir lightly for a minute to chill. Pour to a cold coupe glass or equivalent, garnish with the cranberries and finish with a brief mist with the mandarin essence above the glass.
